Every time I see a “healthy eating” article, I want to scream — because none of it applies to my kitchen. “Eat more salads.” “Cut out carbs.” These people have never made chicken karahi.

Here is a REAL guide to making Pakistani food healthier — without losing the flavor.

The Oil Problem and How to Fix It

  • Use a non-stick or cast iron karahi — requires 30-40% less oil
  • Measure your oil — I used to pour freely. Now I use tablespoons. Three to four tablespoons is usually enough.
  • After cooking, tilt the pot and spoon off excess oil before serving

Swap Ghee for Everyday Cooking

Save ghee for special occasions and Eid. For daily cooking, olive oil or avocado oil works well.

Load Up on Vegetables

Pakistani cuisine has amazing vegetable dishes that get overlooked. Aloo palak, karela, bhindi, baingan — nutritious, delicious, and deeply traditional.

Reduce Portions, Not Dishes

I never eliminated any dish. I serve smaller portions. A smaller portion of biryani with a large salad. Half the paratha with raita. Your body adapts.

Your culture’s food is not your enemy. Learn to work with it. ☕
